Fresh Mint

Originally established in the eighth century, Fez is home to an ancient and world-famous tannery industry.  Nestled behind a high wall in the heart of the medina is the timeless souq (or leather bazaar), a fascinating landscape of stone vats used to tan and dye the hides of cows, sheep, goats, and camels.  Amusingly, the sector is just as well-known for its distinctive aroma as it is its ancient leather crafting.  In fact, tour guides often offer visitors sprigs of fresh mint to combat the overpowering scent, a tradition that gave rise to the name and theme of this Tajine! The historic tanneries’ captivating processes have changed very little since medieval times.  The renowned Chouara Tannery has existed for nearly 1,000 years!  As gifted artisans prepare the leathers, many plant-based dyes are used to produce bold colors, such as red from poppy flowers, blues from indigo plants, orange from henna, green from mint, and yellow from saffron.  When the hides are ready, skilled craftsmen transform them into stunning belghas (Moroccan slippers), handbags, wallets, furniture, and other fine goods that have become popular in Western markets. Our Fresh Mint Tajines tell a story about the generations of brilliant leather crafters that have preserved the artful methods of a time-honored trade – much like the creative minds behind our signature earthenware.  Each one is embellished with a unique splattering of the very same colors you will find in Fez’s incredible souq.  It’s a vibrant, culture-rich addition to any spread!
